Line your air fryer basket with a parchment paper liner and top with a tortilla OR lightly press the tortilla into a small air fryer-safe pan or dish to form a crust.
In a bowl, whisk together the eggs and cottage cheese.
Sprinkle diced asparagus, green onion, cherry tomatoes, and sliced mortadella over the tortilla.
Pour the egg mixture over the veggies on the tortilla shell. Move it around making sure the egg mixture coats the entire tortilla shell.
Sprinkle shredded cheddar cheese on top.
Air fry for 12 minutes, or until the eggs are set and the tortilla edges are crispy.
Let cool slightly before slicing and serving.
Notes
You can use whatever veggies you have on hand. Omit the ham if you want to make it vegetarian.
Option to press the tortilla into a round oven safe dish which will make the quiche smaller in shape but thicker.
If you want to make this for 2 servings, I recommend adding 2 more eggs. Might take an extra couples minutes in the air fryer for the eggs to set.
