Asparagus Baked Eggs

Ingredients

  • 4 eggs
  • 8 spears asparagus diced
  • 8 cherry tomatoes diced
  • 1 sprig green onion diced
  • ½ cup crumbled feta cheese
  • ½ tsp salt
  • ½ pepper

Instructions

  • Preheat oven to 375°F
  • Prep veggies by washing and dicing them
  • Add a drizzle of olive oil to a small/medium size baking dish
  • Add asparagus and tomatoes
  • Crack eggs on top and sprinkle with green onion and feta cheese
  • Bake for 18-20 minutes

Notes

  • Eggs will continue to set once taken out of the oven ,so if you want runny eggs make sure not to over bake them!
