Ingredients

For the sweet potatoes

  • 4 caramelized sweet potatoes (see recipe)

For the BBQ chicken

  • 2 chicken breasts
  • 1 cup barbecue sauce (your favorite)

For the coleslaw

  • 1 bag coleslaw mix
  • 1/4 cup mayo
  • 1 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • Salt and pepper

Instructions

  • Make the caramelized sweet potatoes: roast 4 sweet potatoes cut side down at 375 degrees F for 1 hour, then mash (see the full recipe).
  • Add the chicken breasts and barbecue sauce to a pot or skillet, cover, and cook over medium-low heat for about 25 minutes, until cooked through.
  • Shred the chicken with two forks and stir it back into the sauce.
  • Make the coleslaw: in a bowl, mix the coleslaw mix with the mayo, apple cider vinegar, maple syrup, salt, and pepper.
  • Plate the mashed sweet potatoes, top with the BBQ chicken, and add a generous scoop of coleslaw. Serve.

Notes

  • Use rotisserie chicken to save time, or swap in ground turkey.
  • Any barbecue sauce works; a sugar-free one keeps it lighter.
  • The coleslaw is best made just before serving so it stays crunchy.
  • Serve the sweet potatoes mashed, or leave them in halves and load them up for a fun, hands-on dinner.
  • For kids, leave out the coleslaw and serve with a side of steamed broccoli
