Blender Oat Banana Bread

Ingredients

  • 2-3 ripe bananas
  • 2 cups rolled oats
  • 2 eggs
  • ¼ cup olive oil
  • 2 tbsp maple syrup more if you like it a bit sweeter or making for kids
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ½ tsp sea salt
  • cup chocolate chips chunks or chopped peanut butter cups

Instructions

  • Preheat oven to 350°F
  • Add all ingredients (except for chocolate) into a blender or food processor and blend until smooth
  • Pour into a greased loaf tin (option to line with parchment paper making it easier to remove the loaf)
  • Top with chocolate chip and stir
  • Bake for 50 minutes
  • Let sit for 10 minutes then remove and let cool fully before slicing
  • Store leftovers in an airtight container
