Boursin Bruschetta Dip

Ingredients

  • 1 Boursin cheese (Garlic & Herb)
  • 1 pint cherry tomatoes, sliced
  • 1 garlic clove, finely diced
  • 2 tbsp olive oil
  • 1 tbsp balsamic glaze, plus more for drizzling
  • Salt and pepper, to taste
  • Crackers or crostini, for serving

Instructions

  • Add the Boursin to a shallow serving dish and spread it into a thin, even layer.
  • Slice the cherry tomatoes and layer them on top.
  • Finely dice the garlic and scatter it over the tomatoes, then season with salt and pepper.
  • Drizzle with the olive oil and balsamic glaze.
  • Gently toss the tomatoes to coat, keeping the Boursin as the bottom layer.
  • Serve with crackers or crostini and enjoy.

Notes

For a bigger party, use 2 Boursin cheeses and double the rest of the ingredients, spread across a larger platter. Let the dip sit 10 to 15 minutes so the tomatoes marinate. Prep the tomato topping ahead and spoon over the Boursin just before serving.
