Boursin Sausage and Veg Orzo

Ingredients

  • 2 cups dry orzo
  • 1 package cooked chicken sausage (4 sausages)
  • 1 pint cherry tomatoes
  • 1 medium zucchini
  • 1 Garlic & Herb Boursin Cheese
  • 2 cups chicken bone broth
  • 2 cups water
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp chili flakes optional

Instructions

  • Slice sausage into 1 inch thin rounds
  • Dice zucchini & slice cherry tomatoes in half
  • In a large pot add a splash of olive (or avocado) oil, chicken sausage and veggies (if you have time, consider browning the sausage first then adding the vegetables)
  • Season with salt, pepper & garlic powder, stir cooking for 5 minutes until vegetables soften
  • Push veggies and sausage to the side & add Boursin cheese, orzo & broth
  • Cover and let simmer for 10 minutes
  • Remove cover & add 1 cup of water, stir until cheese melts and water is absorbed
  • Continue cooking for another 5 minutes while it thickens (add another splash of water if becomes too thick)
  • Remove from heat once orzo is cooked through
  • Serve immediately and enjoy (chili flakes are a perfect garnish with a touch of spice)
  • To reheat leftovers add a splash of water or broth & heat in the microwave or stove top until warmed through

Notes

If it's too watery, continue to cook until it thickens. If it's too thick, add another splash of water. 
You can use pork sausage but make sure to cook it first, then add the vegetables and continue the steps.
