Slice sausage into 1 inch thin rounds
Dice zucchini & slice cherry tomatoes in half
In a large pot add a splash of olive (or avocado) oil, chicken sausage and veggies (if you have time, consider browning the sausage first then adding the vegetables)
Season with salt, pepper & garlic powder, stir cooking for 5 minutes until vegetables soften
Push veggies and sausage to the side & add Boursin cheese, orzo & broth
Cover and let simmer for 10 minutes
Remove cover & add 1 cup of water, stir until cheese melts and water is absorbed
Continue cooking for another 5 minutes while it thickens (add another splash of water if becomes too thick)
Remove from heat once orzo is cooked through
Serve immediately and enjoy (chili flakes are a perfect garnish with a touch of spice)
To reheat leftovers add a splash of water or broth & heat in the microwave or stove top until warmed through
