Chicken Nugget Caesar Salad

Ingredients

Salad

  • 1 head romaine lettuce
  • 3 cups cubed bread or 2 cups of store-bought croutons
  • ¼ cup parmesan cheese
  • 12 chicken nuggets
  • ¼ cup olive oil
  • 1 tsp garlic powder
  • 2 tsp Italian seasoning
  • 1 tsp chili flakes optional
  • 1 tsp salt
  • 1 tsp pepper

Dressing

  • cup mayo
  • 1 anchovy
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • ½ lemon juiced
  • 1-2 cloves garlic minced depending on your garlic preference!
  • 3 tbsp grated parmesan cheese
  • ½ tsp salt
  • 1 tsp pepper
  • 1-2 tbsp cold water depending on how thick or thin you like your dressing

Instructions

  • Preheat oven to 375°F
  • In a large bowl, combine bread, olive oil and seasoning. Toss until well incorporated
  • Spread bread on a large baking sheet and bake for 18 minutes, shaking halfway through
  • Cook chicken nuggets (either bake or air fry)
  • Wash and chop lettuce
  • Add dressing ingredients to a bowl and whisk together until well incorporated
  • Once chicken nuggets are cooked, slice into strips
  • Assemble salads with lettuce, croutons, and chicken nugget strips. Drizzle with dressing
  • Option to serve with extra parmesan cheese
