Chopped Orzo Salad with Burrata

Ingredients

  • 1 cup orzo
  • 2 cups water or broth
  • 2 colorful bell peppers diced
  • 1 tomato
  • ½ large cucumber
  • ¼ cup chopped green onions
  • ¼ cup chopped basil

Dressing

  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • 2 tsp maple syrup
  • 1 clove garlic minced or grated
  • 1 tsp paprika
  • Salt and pepper to taste
  • Burrata cheese

Instructions

  • Cook orzo as per package instructions; drain and let cool
  • Wash and dice your veggies: bell peppers, tomatoes, cucumbers, green onions, and basil
  • Whisk together the dressing ingredients
  • Combine orzo, veggies, and dressing in a large bowl
  • Top with fresh burrata, extra olive oil, sea salt, and chili flakes
