Cinnamon French Toast Bake

Ingredients

  • ½ loaf French bread cubed
  • 6 eggs
  • 2 cups almond milk or milk of choice
  • 2 tsp vanilla
  • 1 tbsp cinnamon divided
  • 1 tsp sea salt
  • Maple syrup and fresh berries for serving

Butter Sauce

  • cup vegan butter or regular butter
  • ½ cup coconut sugar
  • 1 tbsp cinnamon

Instructions

  • Preheat oven to 425°F
  • Grease a large rectangular baking dish
  • In a small saucepan add butter and heat until melted. Add coconut sugar and cinnamon; stir
  • Add half of the butter sauce to the bottom of the baking dish and spread evenly
  • Cube your bread and spread evenly on the baking dish
  • In a medium bowl, whisk together eggs, milk, cinnamon and salt
  • Pour egg mixture over bread and gently stir until fully coated
  • Drizzle remaining butter sauce on top
  • Bake for 25 minutes and broil for 2 minutes to get the top nice and toasty
  • Serve with maple syrup and fresh berries
