Ingredients

hard boiled eggs
1/2
avocado
1/4
cup
cottage cheese
1
dill pickle
2
tsp
dijon mustard
salt & pepper
Toast

green onion
optional
Instructions
Boil eggs by adding eggs to boiling water and cooking them for 9 minutes. Transfer to an ice bath for 5 minutes. Then peel.
Add eggs, avocado, pickle, cottage cheese, dijon, salt and pepper to a cutting board and chop until smooth
Add egg mixture on top of toast
Option to sprinkle with green onion or hot sauce
Notes
Boil eggs ahead of time so this becomes a true 5 minute lunch!
You can also mash the egg with the cottage cheese, avocado, dijon and spices first then add in diced pickles.
