Creamy Pickle Avocado Egg Smash

Ingredients

  • 2 hard boiled eggs
  • 1/2 avocado
  • 1/4 cup cottage cheese
  • 1 dill pickle
  • 2 tsp dijon mustard
  • salt & pepper
  • Toast
  • 1 green onion optional

Instructions

  • Boil eggs by adding eggs to boiling water and cooking them for 9 minutes. Transfer to an ice bath for 5 minutes. Then peel.
  • Add eggs, avocado, pickle, cottage cheese, dijon, salt and pepper to a cutting board and chop until smooth
  • Add egg mixture on top of toast
  • Option to sprinkle with green onion or hot sauce

Notes

  • Boil eggs ahead of time so this becomes a true 5 minute lunch! 
  • You can also mash the egg with the cottage cheese, avocado, dijon and spices first then add in diced pickles.
