Easy Cheeseburger Bowls

Ingredients

Beef & Potatoes

  • 1 lb ground beef
  • 1/2 tsp each salt, pepper, garlic powder, onion powder & paprika
  • 1/4 cup BBQ sauce (optional, adds flavor & juiciness)
  • 2 potatoes (sweet or regular), peeled and diced
  • 1 tsp each salt, pepper, garlic powder & paprika (for the potatoes)
  • 1 tbsp olive oil (for the potatoes)

Bowl Components

  • 1 head lettuce, chopped
  • 1/2 cup diced pickles
  • 1/2 cup diced white onion
  • 1 cup shredded cheese
  • Sesame seeds, for garnish

Special Sauce

  • 1/4 cup mayo
  • 1/4 cup full-fat or 5% Greek yogurt
  • 3 tbsp ketchup
  • 1 to 2 tsp white vinegar or pickle juice, to taste
  • 1 tbsp finely diced white onion (optional)
  • 1/4 tsp garlic powder
  • Yellow mustard and/or hot sauce, to taste (optional)
  • Pinch of salt

Instructions

  • Peel and dice the potatoes, then toss with olive oil and spices in a bowl.
  • TO BAKE: spread the potatoes on a greased sheet and roast at 415F for about 30 minutes, flipping halfway, until crispy and golden.
  • TO AIR FRY: cook the potatoes at 400F for 15 to 18 minutes, shaking the basket halfway, until crispy.
  • Cook the ground beef in a pan until no longer pink, then stir in the spices and BBQ sauce.
  • Wash and chop the lettuce, dice the pickles and onion.
  • Whisk together all the special sauce ingredients.
  • Assemble bowls with lettuce, beef, potatoes, onion, pickles, and cheese.
  • Drizzle with the special sauce and sprinkle with sesame seeds. Enjoy!

Notes

Make the special sauce ahead so the flavors meld. Store the components separately for easy meal prep.
