Easy Greek Salad with Homemade Dressing

Ingredients

  • 1 head romaine lettuce washed and finely chopped
  • 1 large cucumber diced
  • 1 pint cherry tomatoes diced
  • 1/4 red onion finely diced
  • 1/2 cup kalamata olives diced
  • 1/2 block feta cheese crumbled

Homemade Greek Dressing

  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 2 cloves garlic grated
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 1 tbsp lemon juice fresh squeezed
  • salt and pepper to taste

Instructions

  • Wash and finely chop the romaine lettuce. Dice the cucumber, cherry tomatoes, and red onion. Dice the kalamata olives. Add everything to a large salad bowl.
  • Make the dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, oregano, grated garlic, dijon mustard, honey, lemon juice, salt, and pepper until well combined and emulsified.
  • Taste the dressing and adjust seasoning as needed — add more vinegar for tang, honey for sweetness, or salt and pepper to taste.
  • Crumble the feta cheese over the salad.
  • Pour the dressing over the salad just before serving and toss well to coat all the ingredients.
  • Serve immediately and enjoy! This salad pairs beautifully with Greek air fryer chicken thighs.

Notes

If you're making it ahead of time, I would add the lettuce on top at the very end to make sure it stays crisp. Toss with dressing before serving.
