Ingredients

  • 6 chicken drumsticks
  • 2 large potatoes diced
  • 1 small head cauliflower chopped into florets
  • 2 –3 tablespoons olive oil
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Optional for serving: ketchup honey mustard, or your favorite dipping sauce

Instructions

  • Preheat your oven to 425°F and line a large sheet pan with parchment paper for easy cleanup.
  • Place the drumsticks and diced potatoes on the sheet pan. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, onion powder, and paprika. Toss everything together until well coated.
  • Spread everything out in a single layer and bake for 20 minutes.
  • Remove the pan, flip the chicken and potatoes, and add the chopped cauliflower. Toss the cauliflower lightly in the oil and seasoning already on the pan.
  • Return to the oven for another 20–25 minutes, or until the chicken is fully cooked (internal temp of 165°F) and the vegetables are golden and tender.
  • Let cool slightly and serve with ketchup or honey mustard for dipping.
