Easy Taco Bowls

Ingredients

  • 1 lb. ground beef
  • 2 tbsp taco seasoning
  • ¼ cup water or broth
  • 1 head lettuce
  • 1 cup cooked rice optional
  • 1 cup guacamole store-bought or homemade
  • 1 cup salsa
  • 1 cup shredded cheese
  • 2 green onions
  • 1 jalapeño
  • Olive oil

Instructions

  • Heat 1 tsp of olive oil in a large skillet on medium heat. Once hot, add beef.
  • Cook beef, breaking it into smaller crumbles with a wooden spoon for 5 minutes, or until no longer pink.
  • Add taco seasoning and water or broth to skillet. Stir and simmer for 2 minutes until all the liquid has evaporated.
  • Wash and slice lettuce, green onion and jalapeños.
  • Assemble taco bowl with lettuce, beef, rice, guacamole, salsa, cheese, green onion and jalapeños.
