head of lettuce

bell pepper
thinly sliced

cucumber
thinly sliced

red onion
thinly sliced

radishes
thinly sliced
Fresh dill or chives

grated parmesan cheese
Maple Dijon Dressing
1/4
cup
olive oil

tbsp
balsamic vinegar

tbsp
lemon juice
(or omit and use 3 tbsp balsamic vinegar)

Dijon mustard

tsp
maple syrup
Salt & pepper
to taste
Optional: 1 garlic clove
grated
Instructions
Wash and slice vegetables (I love using a mandolin for thinly slicing)
Whisk together dressing ingredients (taste and adjust as needed)
Before serving, toss the salad with dressing
Notes
You can swap the ingredients for your favorite vegetables. Radishes are a nice Spring touch.
You can sub the balsamic vinegar for red wine, apple cider or even white vinegar and if you don't have a lemon, just add extra vinegar.
You can sub the parmesan for feta or goat cheese.
I like to use a mandolin to very thinly slice my vegetables.
