Ingredients

  • 1 head of lettuce
  • 1/2 bell pepper thinly sliced
  • 1/2 cucumber thinly sliced
  • 1/3 red onion thinly sliced
  • 3 radishes thinly sliced
  • Fresh dill or chives
  • 1/3 cup grated parmesan cheese

Maple Dijon Dressing

  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp lemon juice (or omit and use 3 tbsp balsamic vinegar)
  • 1 tsp Dijon mustard
  • 2 tsp maple syrup
  • Salt & pepper to taste
  • Optional: 1 garlic clove grated

Instructions

  • Wash and slice vegetables (I love using a mandolin for thinly slicing)
  • Whisk together dressing ingredients (taste and adjust as needed)
  • Before serving, toss the salad with dressing

Notes

  • You can swap the ingredients for your favorite vegetables. Radishes are a nice Spring touch.
  • You can sub the balsamic vinegar for red wine, apple cider or even white vinegar and if you don't have a lemon, just add extra vinegar.
  • You can sub the parmesan for feta or goat cheese. 
  • I like to use a mandolin to very thinly slice my vegetables.
