French Onion Gnocchi Skillet

Ingredients

  • 3 medium onions
  • 2 tbsp butter
  • ¼ cup olive oil
  • 1 pkg gnocchi
  • 1 cup broth
  • 1 tbsp balsamic vinegar
  • 1 cup shredded cheese I did a combination of mozzarella and Gruyere
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp chili flakes
  • Chives for garnish

Instructions

  • Peel and slice onions into halfmoons
  • Add butter and oil to a hot skillet
  • Once butter has melted, add onions and cook on low heat until they are nicely caramelized (stirring often). Season with salt, pepper and chili flakes. This will take around 15-20 minutes. If needed, add an additional drizzle of oil to prevent onions from burning
  • Shred cheese and dice chives
  • Once onions are cooked, add balsamic vinegar and package of gnocchi. Cook for 2 minutes, stirring continuously. Add in broth and cover with lid for 5 minutes
  • Remove lid and stir. Continue to cook for another 5 minutes until the liquid has evaporated
  • Top with cheese and broil for 2 minutes in the oven
  • Top with chives and enjoy immediately
