Ingredients

  • 1 baguette, sliced
  • 1 package prepared bruschetta (about 1 1/2 cups)
  • 1 package fresh mozzarella cheese
  • 2 tbsp olive oil
  • Balsamic glaze (optional, for drizzling)

Instructions

  • Slice the baguette into rounds.
  • Heat a large skillet with olive oil over medium heat.
  • Add the baguette slices and cook about 3 minutes per side, until golden and crisp.
  • Top each crostini with a spoonful of bruschetta.
  • Slice the fresh mozzarella and use a small ghost cookie cutter (or a knife) to cut ghost shapes from each slice.
  • Top each bruschetta with a mozzarella ghost. Drizzle with balsamic glaze if you like, and serve.

Notes

  • Trader Joe's prepared bruschetta is a great shortcut.
  • No ghost cookie cutter? Freehand little ghost shapes with a paring knife.
  • The flavor is so good as is, but a drizzle of balsamic glaze adds a nice finishing touch.
  • Toast the baguette in the oven instead of the skillet if you prefer.
