Healthier Caramelized Onion Dip

Ingredients

  • 2 large onions
  • ¼ cup olive oil
  • 1 cup Greek yogurt
  • 1/4 cup mayo
  • 1 tbsp vinegar white or apple cider
  • ¼ cup diced chives or green onion
  • ½ tsp cayenne
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  • Dice onions, consider using a chopper!
  • In a large skillet add olive oil
  • Add onions and sauté on medium-low heat for 45 minutes, stirring often
  • Once onions are caramelized, remove and place on a cutting board to cool
  • Finely dice chives
  • In a medium bowl, combine onions with yogurt, mayo, chives, vinegar and spices
  • Serve with chips, baguette, crackers or vegetables

Notes

  • You can make this dip ahead of time and store in the fridge. Then take out a few minutes before serving so it comes to room temperature. Enjoy with chips, crackers or veggies.
  • I used to make this dip without the mayo and it tasted really good! I recently started to add a little bit for an extra creamy and rich taste. Both ways work!
