Healthier Tater Tot Hotdish

Ingredients

  • 1 lb extra lean ground beef
  • 1 small onion
  • 1 tsp garlic powder paprika salt and pepper
  • 3 garlic cloves
  • 1.5 cups mixed frozen peas corn and carrots
  • 1/2 cup cottage cheese
  • 3/4 cup beef bone broth (or regular beef broth)
  • 1 cup shredded Gouda (or cheddar cheese)
  • 1 15 oz bag of tater tots
  • green onion & hot sauce (optional)

Instructions

  • Preheat your oven to 400°F.
  • In a large oven safe skillet over medium heat, add ground beef, onion and spices. Cook until the beef is no longer pink.
  • Blend cottage cheese and broth together until smooth in a small blender.
  • Mix in the frozen vegetables, cottage cheese, and beef bone broth. Stir until everything is well combined and creamy.
  • Simmer for a few minutes but you want it to be nice and runny because the liquid will be absorbed during baking.
  • Sprinkle shredded Gouda over the top.
  • Arrange the tater tots in a single layer over the cheese.
  • Bake for 20 minutes, or until the tots are golden and crispy and the filling is bubbling.
  • Let cool slightly before serving. Scoop and enjoy this cozy, comforting meal!
  • Option to garnish with green onion and serve with hot sauce

Notes

  • Broil for 1-2 minutes at the end of baking to get the tater tots nice and crispy.
  • Feel free to double this recipe and add to rectangle baking dish.
