healthy no-bake strawberry oat bars

Ingredients

  • 1.5 cups OneDegreeOrganic sprouted rolled oats
  • 1 cup medjool pitted dates
  • ¼ cup dairy free milk
  • 1 tsp vanilla
  • 2 tbsp chia seeds
  • 2 tbsp hemp hearts
  • ¼ cup pumpkin seeds
  • ½ cup freeze dried strawberry + more for topping
  • ¼ cup shredded coconut

Instructions

  • Add pitted dates and milk to a food processor and blend until a smooth paste forms (you’ll need to scrape the sides a few times)
  • Transfer the date mixture to a bowl and add vanilla
  • Add oats, chia seeds, hemp hearts, pumpkin seeds and freeze dried strawberries (crumble them as you add them in or loosely chop them before adding)
  • Mix well (I found it easier to mix with my hand, pressing it together making sure the date mixture covers all the oats)
  • Grease a 9x9 inch dish and line with parchment paper
  • Transfer mixture and press down well. I like to use a glass to roll over and smooth it out.
  • Sprinkle with shredded coconut and additional crushed freeze-dried strawberries and press down again using the bottom of a glass
  • Place in the freeze for for a minimum of 30 minutes then remove and using a sharp knife cut into 12 squares
  • Store in the fridge for up to 5 days (or freeze for up to 3 months) and enjoy!

Notes

  • Make sure your dates are plump! If they have dried out, consider soaking them in hot water for 20 minutes then draining before adding to the blender.
  • Store in the fridge so they don't fall apart.
  • When cutting into squares, make sure you're using a sharp knife.
