high protein sweet potato taco bowls

Ingredients

  • 2 medium sweet potatoes
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 1 lb lean ground beef
  • 1/2 red bell pepper
  • 1 packet taco seasoning or 2 tbsp
  • 1 large avocado
  • 1 small head of lettuce
  • 2 cups cottage cheese
  • hot honey

Instructions

  • Preheat oven to 415
  • Peel and dice sweet potatoes into 1 inch cubes
  • Place diced sweet potato into a bowl with a drizzle of olive oil, salt, pepper, paprika and garlic powder, toss well
  • Spread on a lined baking sheet with parchment paper
  • Bake for 40 minutes
  • Meanwhile cook your ground beef until no longer pink, breaking it up
  • Option to drain any excess grease
  • Add diced peppers and let cook for another minute
  • Add taco seasoning and 1/4 cup water, stir well and simmer for 5 minutes
  • Wash and thinly slice lettuce and avocado
  • Assemble bowls with sweet potato, beef, lettuce, avocado and cottage cheese
  • Drizzle with hot honey

Notes

  • You can prep the sweet potato and taco beef ahead of time then reheat and assemble bowls for a quick dinner.
  • You can omit the red peppers and just cook ground beef with taco seasoning.
  • If you're not a fan of hot honey, consider adding salsa for extra sauce and flavour.
  • You can also serve these with tortilla shells and have everyone make their own wraps or tacos.
  • If you're not sure about the texture of cottage cheese, consider blending it!
  • If you want to add in more protein, consider swapping water for beef bone broth when cooking the beef with taco seasoning.
