Honey Mustard Cobb Salad

Ingredients

Salad

  • 2 chicken breasts grilled or pan fried
  • 6 pieces bacon
  • 1 head lettuce
  • ¼ red onion
  • 4 eggs
  • 1 cup corn kernels
  • ½ cup feta cheese
  • 1 avocado

Dressing

  • ¼ cup honey
  • ¼ cup Dijon mustard
  • ¼ cup mayo
  • 1 tbsp white vinegar
  • sprinkle salt & pepper

Instructions

  • Cook chicken (either grill or pan fry); dice into cubes.
  • Cook bacon and chop.
  • Boil eggs (For hard boiled, add eggs to boiling water and set the timer for 10 minutes. Remove and immediately run cold water over eggs until cooled).
  • Cook corn in olive oil over medium heat, stirring often until it is nicely charred.
  • Chop lettuce, red onion and avocado.
  • Whisk together dressing ingredients.
  • Assemble bowls starting with lettuce, chicken, bacon, red onion, avocado, egg and crumbled feta cheese.
  • Toss well with dressing and enjoy!
