Ingredients

For the bowls

  • 1 lb ground pork
  • 1 head broccoli, cut into florets
  • 2 green onions, sliced
  • Cooked rice, for serving
  • Chili oil or hot sauce (optional)

For the sauce

  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp gochujang
  • 1 tbsp rice vinegar
  • 2 tsp sesame oil
  • 2 garlic cloves, minced

Instructions

  • Cook the rice according to package directions and divide it among 4 meal prep containers.
  • Heat a large skillet over medium-high heat. Add the ground pork and cook, breaking it up, until browned and crispy, about 8 to 10 minutes. Drain excess fat if needed.
  • While the pork cooks, whisk together the soy sauce, honey, gochujang, sesame oil, and minced garlic.
  • Pour the sauce over the crispy pork and stir to coat. Add the broccoli florets, put the lid on, and let it cook and steam for 5 minutes, until the broccoli is tender.
  • Remove from heat. Divide the pork and broccoli mixture over the rice in each container.
  • Top each bowl with sliced green onions and a drizzle of chili oil or hot sauce, if using.

Notes

  • Gochujang is a Korean fermented chili paste found in the international aisle; it gives the sauce its signature flavor.
  • Use ground chicken, turkey, or beef in place of the pork.
  • For lower carb bowls, serve over cauliflower rice.
  • Let everything cool before sealing the containers for meal prep.
