lazy 5-minute buffalo chicken salad

Ingredients

  • 1 cup shredded or diced chicken
  • 1/3 cup Greek yogurt
  • 1 tbsp mayo
  • 2 tbsp hot sauce
  • salt & pepper
  • 4 pieces of lettuce
  • 4 slices of bread

Instructions

  • Combine chicken with yogurt, mayo, hot sauce, salt and pepper, mix well
  • Toast your bread
  • Add chicken salad and lettuce
  • Close sandwich and cut in half

Notes

  • You can double or triple this recipe and store in the fridge for quick meals.
  • You can swap the sandwich and make a wrap instead or eat with veggies and crackers.
  • Option to add diced onion and/or celery. I tried to keep it very simple as I was short on time!
