Loaded Taco Cous Cous Salad

Ingredients

  • 1 can black beans
  • 1 cup uncooked cous cous
  • 1 pint cherry tomatoes
  • cup red onion
  • cup cilantro
  • 1 jalapeño
  • 1 avocado
  • ¼ cup olive oil
  • 1 lime
  • 1 tbsp taco seasoning

Instructions

  • Cook cous cous according to package instructions
  • Dice onion, tomatoes, avocado, jalapeño, and cilantro
  • Drain and rinse black beans
  • In a large bowl combine cous cous, beans, and veggies. Add olive oil, lime juice and taco seasoning
  • Toss until well incorporated
