Melted Brie and Strawberry Crostini

Ingredients

  • 1 baguette sliced into ½-inch rounds
  • ½ cup fresh strawberries hulled and sliced
  • 1 small wheel brie cheese 4–6 oz, sliced
  • hot honey to drizzle
  • 1 tablespoon olive oil for brushing

Instructions

  • Preheat your oven to 400°F (200°C).
  • Slice the baguette into ½-inch rounds and arrange on a large baking sheet. Lightly rub or brush each slice with olive oil.
  • Bake for 5 minutes until the edges are just starting to turn golden.
  • Meanwhile, slice the brie and hull and slice the strawberries. For a Mother's Day touch, slice the strawberries into heart shapes by cutting a small V into the top of each slice.
  • Remove the baking sheet from the oven and top each baguette slice with a piece of brie.
  • Return to the oven for another 3–4 minutes, until the brie is fully melted and bubbling.
  • Remove from the oven. If preferred, peel off the white rind pieces from the melted brie — they come off easily when warm.
  • Top each crostini with sliced strawberries, then drizzle generously with hot honey. Serve immediately.
