Preheat your oven to 400°F (200°C).
Slice the baguette into ½-inch rounds and arrange on a large baking sheet. Lightly rub or brush each slice with olive oil.
Bake for 5 minutes until the edges are just starting to turn golden.
Meanwhile, slice the brie and hull and slice the strawberries. For a Mother's Day touch, slice the strawberries into heart shapes by cutting a small V into the top of each slice.
Remove the baking sheet from the oven and top each baguette slice with a piece of brie.
Return to the oven for another 3–4 minutes, until the brie is fully melted and bubbling.
Remove from the oven. If preferred, peel off the white rind pieces from the melted brie — they come off easily when warm.
Top each crostini with sliced strawberries, then drizzle generously with hot honey. Serve immediately.
