Street Corn

fresh corn
or sub for 1 can or 1 cup frozen corn

tsp
smoked paprika

red onion

cilantro

jalapeño

large clove
garlic

lime
juiced
2 tbsp

mayo
2 tbsp
greek yogurt

tbsp
crumbled feta cheese
Salt & Pepper
to taste

smoked paprika

Instructions
Remove corn from the cob
Dice all veggies
Heat a large skillet with avocado oil; once hot, add corn, paprika, salt and pepper. Cook until nicely charred
Season with salt and pepper
Combine corn, red onion, cilantro, jalapeno, garlic, lime juice, mayo and feta cheese in a large bowl; mix well
Pat dry shrimp and season with smoked paprika
Heat a large skillet with oil; add shrimp (spread out evenly) and cook for 2 mins per side on high heat
Assemble tacos with street corn and shrimp. Enjoy!
