Mini Egg Rice Crispies

Ingredients

  • 4 cups brown rice crips or Rice Krispies®
  • ¼ cup butter or vegan butter 1 stick
  • 1 tsp vanilla
  • 8 oz large marshmallows
  • 1 cup Mini Eggs half slightly crushed

Instructions

  • Melt butter in a large Dutch oven or heavy pot
  • Add marshmallows and vanilla; stir until a smooth texture is formed
  • Remove from heat and stir in rice crips and chopped Mini Eggs
  • Stir and transfer into a greased baking dish
  • Sprinkle with remaining mini eggs on top and press down
  • Let sit for 30 minutes; cut into pieces and enjoy!
