One pot beef & broccoli ramen

Ingredients

  • 3 packs of instant ramen
  • 2 cups of beef bone broth
  • 1 lb lean ground beef
  • 1 head of broccoli
  • 1/4 cup soy sauce or your go to teriyaki sauce (or the sauce that came with the ramen)

Instructions

  • In a large pot, add ground beef and cook on medium heat until no longer pink (if using another type of ground meat, add a splash of oil)
  • Drain excess grease if necessary
  • Add broccoli, dry noodles (option to break them in half) & bone broth
  • Cover with lid & let cook for 4 minutes, then mix everything to ensure all noodles are covered with liquid
  • Continue to cook stirring until noodles are cooked through (they should cook within in 5-10 minutes)
  • Remove from heat and stir in sauce
  • Serve and option to garnish with green onion and/or chili oil or hot sauce

Notes

  • I love topping mine with chili oil.
  • If serving to toddlers, I like to use scissors to cut the noodles once plated.
  • If you're using a smaller pan, break the noodles in half.
  • If there's excess liquid, it will continue to get absorbed by the noodles the longer the they sit
  • Buy pre cut broccoli or use frozen broccoli to make this dish even easier
