Instructions
Preheat oven to 400°F
Scrub potatoes clean and slice into ¼ inch rounds
Add potatoes to a large bowl and toss with a generous drizzle of olive oil and spices
Spread apart on a lined baking sheet and bake for 30 minutes
Flip and bake another 20 minutes until slightly crispy
Shred cheese, crumble bacon, and chop green onion
Top cooked potato thins with cheese and bacon
Broil for 2 minutes or until cheese has melted
Garnish with green onion
Serve with Greek yogurt and hot sauce
