Ingredients

  • 3 medium russet potatoes
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ¼ tsp cayenne optional
  • ½ cup shredded cheddar cheese
  • 5 strips bacon cooked
  • ¼ cup diced green onion

Instructions

  • Preheat oven to 400°F
  • Scrub potatoes clean and slice into ¼ inch rounds
  • Add potatoes to a large bowl and toss with a generous drizzle of olive oil and spices
  • Spread apart on a lined baking sheet and bake for 30 minutes
  • Flip and bake another 20 minutes until slightly crispy
  • Shred cheese, crumble bacon, and chop green onion
  • Top cooked potato thins with cheese and bacon
  • Broil for 2 minutes or until cheese has melted
  • Garnish with green onion
  • Serve with Greek yogurt and hot sauce
