Prosciutto & Zucchini Egg Cups

Ingredients

  • 12 eggs
  • 6 slices prosciutto
  • 6 slices zucchini
  • ¼ cup shredded parmesan
  • ¼ cup chives
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • Preheat oven to 375°F
  • Generously grease a muffin tin with cooking spray
  • Add prosciutto and/or zucchini to the bottom
  • Top with a cracked egg
  • Sprinkle with salt, pepper, cheese and chives
  • Bake for 15 minutes and let sit in muffin tin for 5 minutes
  • Gently remove and serve immediately
  • Store in an airtight container in the fridge for up to 4 days
