Ingredients

eggs
1/4
cup
low fat cottage cheese
Salt, pepper, chili flakes
handful of arugula
or spinach
1/4
of an avocado
1/2
a tomato diced
or handful of cherry tomatoes diced
1/3
cup
shredded cheddar cheese
1
medium flour tortilla
Instructions
Whisk together eggs with cottage cheese
Prep all your vegetables
Heat a medium pan with 2 tsp olive oil
Add eggs with cottage cheese and twirl pan to coat
Continue to cook until they start to set
Once they are almost set & can move freely on the pan place tortilla on top & carefully flip
Add cheese, veggies & more cheese
Fold in half and cook on each side for 30 more seconds
Remove from heat, cut in half & enjoy
Notes
Tip: if you want the eggs to set faster, consider putting a lid on and make sure you're using a good quality pan otherwise the egg might stick.
