Protein Egg Tortilla

Ingredients

  • 2 eggs
  • 1/4 cup low fat cottage cheese
  • Salt, pepper, chili flakes
  • handful of arugula or spinach
  • 1/4 of an avocado
  • 1/2 a tomato diced or handful of cherry tomatoes diced
  • 1/3 cup shredded cheddar cheese
  • 1 medium flour tortilla

Instructions

  • Whisk together eggs with cottage cheese
  • Prep all your vegetables
  • Heat a medium pan with 2 tsp olive oil
  • Add eggs with cottage cheese and twirl pan to coat
  • Continue to cook until they start to set
  • Once they are almost set & can move freely on the pan place tortilla on top & carefully flip
  • Add cheese, veggies & more cheese
  • Fold in half and cook on each side for 30 more seconds
  • Remove from heat, cut in half & enjoy

Notes

Tip: if you want the eggs to set faster, consider putting a lid on and make sure you're using a good quality pan otherwise the egg might stick.
