Roasted Vegetable & Bacon Boursin Pasta

Ingredients

  • 1 pint cherry tomatoes
  • 1 red bell pepper
  • 3 cloves garlic
  • 1 small head broccoli
  • 1 pack Boursin Garlic & Fine Herbs Cheese
  • 6 slices of bacon or pack of pancetta
  • ½ cup reserved pasta water
  • 4 cups dried noodles
  • Salt & pepper
  • Chili flakes optional

Instructions

  • Preheat oven to 350°F.
  • Wash and chop broccoli into small florets and red pepper into 1 inch strips.
  • On a large baking dish, add Boursin cheese, tomatoes, peppers, broccoli, and garlic.
  • Drizzle with olive oil and season with salt, pepper and chili flakes (optional).
  • Bake for 30 minutes.
  • Meanwhile, add bacon or pancetta to a skillet and cook for 8 minutes over medium heat, stirring often until crispy. Remove from heat and place on a plate with paper towel to drain the extra grease.
  • Bring a large pot of salted water to a boil and cook noodles (1 minute less than package instructions).
  • Reserve ½ cup of pasta water and drain noodles.
  • Remove veggies and cheese from the oven; stir everything together until cheese is creamy.
  • Add noodles, bacon, and 1/3 cup reserved pasta water. Stir again until noodles are well coated. Add more pasta water if needed.
  • Enjoy immediately!
