Ingredients

Salsa verde chicken

  • 4 small or 2 large chicken breasts
  • 1 16 oz jar salsa verde
  • 2 tbsp taco or chili lime seasoning

Bowls

  • cooked rice
  • black beans
  • mango optional
  • jalapeno
  • greek yogurt

Instructions

  • Preheat oven to 425
  • Pat dry chicken breasts
  • Rub with seasoning
  • In a baking dish, pour half the salsa
  • Add chicken breasts and top with remainder salsa verde
  • Place chicken in the oven to bake for 25-30 min (until it reaches internal temperature of 165F)
  • Remove chicken and shred with two forks or using a hand mixer
  • Toss the chicken with remainder of sauce
  • Assemble bowls with rice, chicken, beans, mangos, jalapenos and greek yogurt
