Salsa verde chicken

small or 2 large chicken breasts

jar salsa verde

tbsp
taco or chili lime seasoning
Bowls
cooked rice
black beans
mango
optional
jalapeno
greek yogurt
Instructions
Preheat oven to 425
Pat dry chicken breasts
Rub with seasoning
In a baking dish, pour half the salsa
Add chicken breasts and top with remainder salsa verde
Place chicken in the oven to bake for 25-30 min (until it reaches internal temperature of 165F)
Remove chicken and shred with two forks or using a hand mixer
Toss the chicken with remainder of sauce
Assemble bowls with rice, chicken, beans, mangos, jalapenos and greek yogurt
