simple bacon and asparagus pasta

Ingredients

  • 6 pieces of bacon
  • 12 pieces of asparagus trimmed & sliced into smaller pieces
  • 1/2 cup frozen peas optional
  • 3-4 cups dry pasta
  • 1/3 cup reserved pasta water
  • 3/4 cup shredded Parmesan or pecorino
  • Chili flakes for serving

Instructions

  • Bring a large pot of salted water to a boil
  • In a medium skillet, add bacon & cook until crispy, remove from heat & dice.
  • Remove excess bacon fat & add a splash of oil
  • Add asparagus & season with salt & pepper
  • Cook your noodles al dente & reserve pasta water
  • Once asparagus is cooked (about 5 mins), add cooked noodles, bacon, frozen peas, parmesan cheese & reserved pasta water
  • Mix everything well & let simmer for a couple mins
  • Serve & enjoy with extra pepper & chili flakes

Notes

This recipe has a very simple sauce, I recommend topping your plate with lots of fresh pepper, parmesan and chili flakes for the perfect kick!
