Ingredients
Tomato Soup

canned tomatoes
1
small onion
3
garlic cloves
1
tbsp
Italian seasoning
or 1 tsp each thyme, oregano and basil
½
tsp
salt
½
tsp
pepper
½
tsp
chili flakes
optional

tbsp
butter
Grilled Cheese

Shredded cheese
Instructions
Dice onion and garlic.
Add butter to a medium sauce pan and heat over medium heat until the butter is melted.
Add onion and cook until translucent (around 4 minutes).
Stir in garlic and spices; cook for one minute.
Add canned tomatoes and broth; bring to a boil.
Lower heat, cover and gently simmer for 20 minutes.
Add soup to a blender and blend until smooth.
Option to serve soup with a dollop of yogurt or cream and a grilled cheese on the side.
Notes
If you want to add in protein, consider adding 1/2 a can of rinsed cannellini beans or 1/2 cup cottage cheese right before blending the soup
