Smashed Mediterranean Chicken Tacos

Ingredients

  • 1 lb ground chicken
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp italian seasoning
  • 8 Small flour tortilla shells (or 4 medium shells)
  • 1 cup Tzatziki (homemade or storebought)
  • 1 cup diced cherry tomatoes
  • 1 cup shredded lettuce
  • 1 cup diced cucumbers
  • Feta cheese (optional)

Instructions

  • Divide chicken in 8 (or 4 depending on your tortilla size) and press a thin layer of chicken directly onto each mini tortilla.
  • Season each tortilla with salt, pepper and italian seasoning
  • Heat a skillet (or griddle pan) over medium heat with a light spray of oil. Place the tortillas chicken-side down and cook for 4–5 minutes until the chicken is fully cooked and slightly crispy. Flip and cook the tortilla side for another 1–2 minutes.
  • Remove from the pan and top with tzatziki, chopped cherry tomatoes, shredded lettuce, and diced cucumbers.
  • Serve immediately

Notes

  • Because the chicken is in a thin layer on the tortilla it will cook through! Just make sure to press down and let it cook as per the instructions above.
  • Option to finish with a sprinkle of feta cheese, I just ran out.
