Divide chicken in 8 (or 4 depending on your tortilla size) and press a thin layer of chicken directly onto each mini tortilla.
Season each tortilla with salt, pepper and italian seasoning
Heat a skillet (or griddle pan) over medium heat with a light spray of oil. Place the tortillas chicken-side down and cook for 4–5 minutes until the chicken is fully cooked and slightly crispy. Flip and cook the tortilla side for another 1–2 minutes.
Remove from the pan and top with tzatziki, chopped cherry tomatoes, shredded lettuce, and diced cucumbers.
Serve immediately
Notes
Because the chicken is in a thin layer on the tortilla it will cook through! Just make sure to press down and let it cook as per the instructions above.
Option to finish with a sprinkle of feta cheese, I just ran out.
