Ingredients

  • 1 can refried beans
  • 1 container (16 oz) cottage cheese
  • 2 large avocados
  • Juice of 1 lime
  • 1 jar salsa
  • 1 cup shredded cheese
  • 1/4 cup green onion, sliced
  • 1/4 cup Greek yogurt (for the web)
  • Black olives (for the spider)
  • Sea salt, to taste

Instructions

  • Mash the avocados in a medium bowl with the lime juice and a sprinkle of sea salt to make a quick guacamole.
  • Spread the refried beans in an even layer on the bottom of a shallow serving dish.
  • Add a layer of cottage cheese, then the guacamole, then the salsa.
  • Sprinkle the shredded cheese over the top.
  • Transfer the Greek yogurt to a ziplock bag, snip a corner, and pipe a spider web design over the dip.
  • Scatter the green onion around the edges and use olive slices to create a spider. Serve with chips or pita.

Notes

  • Use store-bought guacamole to save time.
  • Blend the cottage cheese first for a smoother layer.
  • Assemble a few hours ahead, then add the yogurt web and spider just before serving so it stays crisp and bright.
