Ingredients

  • 1 pack slider rolls (about 12)
  • 2 boneless skinless chicken breasts
  • 1 bottle (about 18 oz) sugar-free barbecue sauce
  • 12 slices provolone cheese
  • Green olives and toothpicks (for the eyes)
  • Coleslaw (optional, for adults)
  • Roasted sweet potatoes and broccoli (optional, for serving)

Instructions

  • Pour the bottle of barbecue sauce into a pot. Add the chicken breasts and toss to coat.
  • Cover and simmer over medium-low heat for about 25 minutes, until the chicken is cooked through and tender.
  • Shred the chicken with two forks and return it to the pot, stirring to coat in the sauce.
  • Slice the slider rolls and pile the BBQ chicken onto the bottoms.
  • Cut the provolone slices into jagged triangles to look like monster teeth and add on top (plus coleslaw, if using).
  • Use black olives on toothpicks for the eyes, add the tops, and serve.

Notes

  • For a non-spicy, kid-friendly plate, serve with roasted sweet potatoes and broccoli.
  • Swap provolone for mozzarella or cheddar if you prefer.
  • Use a rotisserie chicken to make this even faster: just warm the shredded meat in the barbecue sauce.
