Sweet Potato Black Bean Quesadillas

Ingredients

  • 2 medium sweet potatoes
  • 2 tbsp olive oil
  • 1 can black beans
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 green onions
  • 1 jalapeño optional
  • Tortilla shells

Instructions

  • Preheat oven to 400°F
  • Peel and cube sweet potatoes
  • Add sweet potatoes to a bowl and drizzle with olive oil and taco seasoning
  • Spread on a large baking sheet and roast for 40 minutes
  • Drain and rinse black beans
  • Shred cheese and dice green onion and jalapeño
  • Add roasted sweet potatoes to a bowl with black beans. Using a potato masher, mash until the ingredients are well incorporated
  • Turn up oven temperature to 415°F
  • Place tortilla shells on a lined baking sheet and fill one side with cheese, black bean sweet potato mixture, veggies, and more cheese
  • Spray with cooking oil and bake for 10 minutes
