Preheat oven to 400°F
Peel and cube sweet potatoes
Add sweet potatoes to a bowl and drizzle with olive oil and taco seasoning
Spread on a large baking sheet and roast for 40 minutes
Drain and rinse black beans
Shred cheese and dice green onion and jalapeño
Add roasted sweet potatoes to a bowl with black beans. Using a potato masher, mash until the ingredients are well incorporated
Turn up oven temperature to 415°F
Place tortilla shells on a lined baking sheet and fill one side with cheese, black bean sweet potato mixture, veggies, and more cheese
Spray with cooking oil and bake for 10 minutes
