viral pickle dip turned chicken salad

Ingredients

  • 3 cup rotisserie shredded chicken
  • 1 entire container of grillos spear pickles diced or 2.5 cups of diced pickles
  • 6 green onions finely diced
  • 1 jalapenos diced for spice
  • 1 cup shredded cheddar cheese
  • 1 heaping cup of greek yogurt
  • 1 tbsp ranch seasoning
  • 1/3 cup pickle juice from the jar

Instructions

  • Shred chicken (I like using a hand blender to get it thinly shredded)
  • Dice the pickles, green onions, and jalapeños.
  • In a large mixing bowl, add shredded chicken, diced pickles, green onions, jalapeños, and shredded cheddar.
  • Add Greek yogurt, ranch seasoning, and pickle juice.
  • Mix everything together until evenly coated and creamy.
  • Taste and adjust seasoning if needed.
  • Serve immediately or refrigerate until ready to enjoy.

Notes

If you're making ahead for lunches, divide into 4 containers and enjoy with pita chips or pretzel thins.
