A super simple, hands off breakfast idea! You can add any & all vegetables including seasonal asparagus. Throw everything into a baking dish and into the oven it goes. The best part is definitely dipping your favourite slice of toast into the runny eggs! YUM!

Ingredients
4 eggs
8 asparagus spears, diced
8 cherry tomatoes, diced
1 sprig of green onion, diced
½ cup crumbled feta cheese
½ tsp salt
½ pepper
Directions
1. Preheat oven to 375°F
2. Prep veggies by washing and dicing them
3. Add a drizzle of olive oil to a small/medium size baking dish
4. Add asparagus and tomatoes
5. Crack eggs on top and sprinkle with green onion and feta cheese
6. Bake for 18-20 minutes
NOTE: eggs will continue to set once taken out of the oven ,so if you want runny eggs make sure not to over bake them!
