1. Pat dry chicken and rub with spices
2. Cook chicken either stove top, air fryer or on the BBQ
3. Toss with ½ cup BBQ sauce and dice into small pieces
4. Slice red onion and pineapple
5. Shred cheese
6. Assemble quesadillas by layering cheese, chicken, red onion, pineapple, drizzle of BBQ sauce and more cheese on one side of the tortilla
7. Fold and place on a lightly greased large skillet on medium-high heat
8. Cook for 3 minutes, flip and cook for another 2 minutes until the cheese has melted and the quesadilla is slightly charred
9. Repeat step 8 until all quesadillas are cooked
10. Cut into 3 and enjoy with additional BBQ sauce
