Homemade Mini Quiches
There is something SO good about homemade appetizers! These little bites make for a perfect snack whether you're hosting brunch or a dinner party. You can switch up the flavours by using different toppings. Whip up a homemade pastry dough OR go the easy route and use crescent roll dough.

Ingredients
1 sheet of pie crust or 1 crescent roll pack
5 eggs
¼ cup cream (option to use a dairy free version)
1 tsp garlic powder
½ tsp salt
½ tsp pepper
½ cup shredded sharp cheddar cheese
¼ cup feta cheese
½ bell pepper
1 cup spinach
¼ cup chives
2 slices of prosciutto

Directions
1. Preheat oven to 400°F
2. Roll out dough on a floured surface until 1/2 inch thick
3. Using a small cup, cut out 24 circles
4. Grease a mini muffin tin and stuff with dough, pressing down around the edges
5. In a medium size bowl, whisk together eggs, cream and spices
6. Chop pepper, spinach and chives
7. Add fillings to dough. Consider these three combinations: pepper, spinach and feta; prosciutto, spinach and cheddar; chives and cheddar
8. Pour egg mixture over each quiche ONLY filling 3/4 of the way! They will bubble up otherwise
9. Bake for 20 minutes; let cool and serve!
