Jammy Egg Avocado Toast

I love eggs ANY way and ANY time of day. One of my favourite methods is soft boiling them so they are perfectly jammy. This method is simple and the best part is there is such minimal clean up. I love having my jammy egg on top of avocado toast. The best breakfast and one I could literally eat every single day!

Ingredients

2 eggs
2 slices of toast
1 avocado
½ tsp salt
½ tsp pepper
1 tsp chili flakes (optional)

Directions

1. Take 2 eggs out of the fridge and let them warm up for a few minutes

2. Add water to a small saucepan and bring it to a boil

3. Once boiling, gently drop in eggs and set your timer for 6 ½ minutes

4. During this time, prep a bowl with cold water and ice (sometimes referred to as an ice bath)

5. Toast your bread and top with half an avocado on each side

6. Once the timer goes off, remove eggs using a slotted spoon and place them directly into the ice bath

7. After a few minutes remove eggs and peel

8. Slice in half lengthwise and top your toast. Season with spices and enjoy immediately
