1. Cook couscous as per package instructions; drain & rinse under cold water. If making ahead, toss with a little olive oil once cooked so it doesn't stick together
2. Chop veggies and strawberries
3. In a small blender, add dressing ingredients and blend until smooth
4. Assemble salad starting with spinach, couscous, strawberries, onion, and goat cheese.
5. Drizzle with dressing and serve
