1. Cook chicken (I like to pan fry mine with olive oil, salt, and pepper).
2. Dice cooked chicken into bite-sized pieces.
3. Chop lettuce, tomato, cucumber, red onion, and green pepper.
4. Add veggies to a large bowl and toss with olive oil, red wine vinegar, oregano, salt, and pepper.
5. Assemble pitas with hummus, chicken, and veggies. Crumble some feta cheese on top.
6. Option to add garlic sauce and/or hot sauce

Leftovers make the perfect lunch.
