Blender Oat Banana Bread
OK this COULD NOT BE an easier recipe! It’s a great way to use up spotty bananas. I love making a loaf on Sunday to have as a snack or breakfast throughout the week. Here, I'm using peanut butter cups instead of chocolate chips but feel free to do your own thing.

Ingredients
2-3 ripe bananas
2 cups rolled oats
2 eggs
¼ cup olive oil
2 tbsp maple syrup (more if you like it a bit sweeter or making for kids)
1 tsp vanilla
1 tsp baking soda
1 tsp baking powder
½ tsp cinnamon
½ tsp sea salt
⅓ cup chocolate chips, chunks or chopped peanut butter cups
2 cups rolled oats
2 eggs

1 tsp baking powder

½ tsp sea salt

Directions
1. Preheat oven to 350°F
2. Add all ingredients (except for chocolate) into a blender or food processor and blend until smooth
3. Pour into a greased loaf tin (option to line with parchment paper making it easier to remove the loaf)
4. Top with chocolate chip and stir
5. Bake for 50 minutes
6. Let sit for 10 minutes then remove and let cool fully before slicing
7. Store leftovers in an airtight container
