Tex-mex Savory Crêpes

A delicious twist on classic crêpes. If you are usually torn between a sweet and savory breakfast, this is the perfect combination! Also, save yourself a headache and make little crêpes vs large ones. Easier to flip and bonus - they look like tacos.

Ingredients

Crêpes
1 cup all purpose flour
½ cup almond milk
½ cup water
2 tbsp melted butter
2 eggs
1 tsp vanilla
1 tsp coconut sugar
Pinch of salt
Toppings
4 eggs
1 large avocado, sliced
1 cup shredded cheddar cheese
1 cup salsa

Directions

1. Combine all crêpe ingredients and whisk until a smooth batter is formed (it should be very thin so don’t worry if it looks watery)

2. Heat a large non-stick pan and drizzle with olive oil

3. Once hot, use a ⅓ measuring cup scoop and pour mixture into pan. Swirl the pan so the batter coats most of the pan

4. Cook each crêpe 2-3 minutes per side. Use a spatula to gently flip the crêpes

5. Place ready crêpes into the oven to stay warm

6. Prepare your toppings. Whisk the eggs and cook in a hot pan for 2 minutes, flipping with a spatula

7. Slice avocado, shred cheese and get your salsa ready

8. Fill your crepes, fold, and serve!
