1. Preheat oven to 350°F.
2. Wash and chop broccoli into small florets and red pepper into 1 inch strips.
3. On a large baking dish, add Boursin cheese, tomatoes, peppers, broccoli, and garlic.
4. Drizzle with olive oil and season with salt, pepper and chili flakes (optional).
5. Bake for 30 minutes.
6. Meanwhile, add bacon or pancetta to a skillet and cook for 8 minutes over medium heat, stirring often until crispy. Remove from heat and place on a plate with paper towel to drain the extra grease.
7. Bring a large pot of salted water to a boil and cook noodles (1 minute less than package instructions).
8. Reserve ½ cup of pasta water and drain noodles.
9. Remove veggies and cheese from the oven; stir everything together until cheese is creamy.
10. Add noodles, bacon, and 1/3 cup reserved pasta water. Stir again until noodles are well coated. Add more pasta water if needed.
11. Enjoy immediately!
